I love Eggs Benedict. Usually (well..."usually" on the, like, once a year occasions when I'm eating breakfast a) at all, b) in a restaurant that c) is "fancy" enough to have it in the first place), I swap spinach for the Canadian bacon.
But this time, I got the salty, fatty, porky goodness.
Look out, Market...I'm gonna be a fully-caffinated, fat-sugar-and-carb driven ANIMAL in a few minutes....!!!

It's actually pretty easy to make at home. You can make hollandaise sauce in the blender which saves your arm from having to whisk the eggs forever by hand. My dad used to make it about once a month as a special treat when I was a kid.
Damn - I'm at Stitches too - though I could have sat next to you the whole time and not had any idea because I don't know what you look like. :) I'm not stalking, I swear.
